There are all kinds of soups – both savory and sweet. Soups can be served hot or cold. Soup can be a light appetizer or an effective meal in itself.
Cold summer soups are usually light and have a cooling effect. Hot, effective winter soups, however, are nutritious and hearty. Sweet soups made from berries and fruits are best chilled.
Soup is a rewarding food, the ingredients for which are almost always available in the refrigerator. Allow a little more time for cooking meat soups. Estonian favorites – pea and sauerkraut soup – also need to simmer for a long time on a low heat. The longer they boil, the tastier the result.
